Avocado, Tomato & Corn Salad

Tampa Bay Parenting 2014 Salad

A light salad is a great side for a quick weeknight dinner or to serve in a big bowl at a family dinner. The fresh flavors of lime, tomato and corn are a fresh mixture. It’s a flavorful combination that will certainly have your family asking for more.


1 cup Tomatoes diced
½ cup Red Onion diced
1 large avocado sliced
1 cup corn
2 tablespoons lime juice
Balsamic Vinegar to taste
Olive Oil to taste


Toss tomatoes, avocado, corn and onion in a large bowl. Drizzle lime juice, balsamic vinegar and olive over the salad instead of dressing. Add salt and pepper to taste.
