Blueberry Kale Quinoa Salad
Salads are a light and fresh lunch option for summer. And with fresh berries coming back into season, there are some really delicious combinations to throw together. Throwing some berries in a salad makes it all the more refreshing and adds a little sweetness to a healthy lunch.
1 cup blueberries
1 lb. Kale
2 cups red quinoa
½ cup goat cheese crumbles
Place 1 cup uncooked quinoa in a pot with 2 cups of water and bring to a boil. Once the quinoa is boiling, bring down to a simmer and cover. Let the quinoa cook until all the water has been absorbed, or about 12 minutes. In a large bowl, mix together the kale, blueberries, goat cheese and quinoa.
Use balsamic vinaigrette as a dressing. For a low-cal option just use some fresh lemon juice.
