It’s hot outside. Really hot.
So, we’re having a popsicle party. And all lovers of frozen treats are invited!
The best part? Running to the store to grab your favorite bomb pops, fudgsicles, or even ingredients to freeze up your own isn’t required. Goodbye hot car seats, sweltering seconds before the A/C kicks in. Hello porch breezes and tree-side sitting.
Can’t wait? We can’t either!!! So we rummaged our kitchens to get you started. Cool down with some easy, refreshing and flipping beautiful pops!
Strawberry Buttermilk Pops
We can’t believe how easy and delicious these pops are! Fresh, tangy, creamy and full of seasonal strawberry sweetness.
- 1 lb strawberries, hulled
- 1 c buttermilk
- 1 c plain Greek yogurt
- 1/2 c honey
- 1/4 c sugar
- pinch of fine salt (or 1/16 tsp!)
Throw all the ingredients into a blender until silky smooth. Pour into popsicle molds and freeze until firm, (at least four hours). To unmold, run lukewarm water on the outside of the mold, and let sit for a few seconds before unveiling your treats!
Coconut Honey Pops
This popsicle is pure and simple, which means it’s a perfect canvas to get creative! Try putting in some toasted coconut flakes, fruit (We put blueberries in! And will be trying bananas and pineapples next.) or even swirl in some almond butter.
- 1 can coconut milk (13-15 oz)
- 3 tbsp honey
- shredded coconut (optional, but encouraged!)
Blend the coconut milk and honey, until smooth. Pour evenly into molds and top with shredded coconut (and desired toppings) before inserting sticks. Freeze until firm, (at least four hours).
