It’s an easy snack to make and keep around the house for the kids to snack on or to offer unexpected guests. Made with fresh veggies and a hint of fruit, it’s a vitamin-packed dish that is certain to keep your family happy and healthy.
1 cup Tomatoes diced
1 cup chopped cucumber
½ cup Red Onion diced
2 tablespoons lime juice
3 tablespoons minced cilantro
Combine mango, tomatoes, cucumber and onion in a large bowl. Add lime juice and cilantro and toss liberally. Add salt and pepper to taste.
Eat with organic tortilla chips or use as a topping on a homemade veggie quesadilla.
