Roasted Brussels Sprouts with Pecans & Cranberries
Brussels sprouts are a good source of iron, potassium and, believe it or not, protein. They definitely deserve a place in any healthy diet. But as with all vegetables, sometimes it helps to make the flavors a bit more interesting. Here is a recipe that adds a nice texture and fun flavor.
1 lb. Brussels sprouts
½ cup dried cranberries
½ cup pecan halves
1 tbsp. olive oil
Salt & pepper to taste
Directions:
Preheat the oven to 400 degrees. Then, cut stems off Brussels sprouts and then slice in half. Place the sliced Brussels sprouts in a 9×9 baking dish. Drizzle the olive oil over the veggies. Then, sprinkle some salt and pepper to taste. Finally, throw in the pecan halves and the dried cranberries.
To coat the Brussels sprouts evenly, combine all the ingredients in a Ziploc and toss before placing in the baking dish. Bake for 12 minutes or until sprouts appear light brown and crispy on the outer layers.
