For a fresh new twist on salad, dress up your spinach with mandarin oranges and the crunch of almonds. This sweet and crunchy salad will keep lunchtime interesting and provides a healthy blend of vitamins and minerals.
1 Cup raw spinach
1 Mandarin Oranges
½ cup almond slices
Wash and dry raw baby spinach. Throw in mandarin orange slices, almond slices and some shredded Parmesan. Use fresh mandarin oranges rather than canned ones, since canned ones often are sitting in syrups. Syrup adds a lot of sugar and therefore calories to your meal. Toss with some lemon juice or a simple balsamic vinaigrette.
